【Special Tajimaguro】Ueda Livestock

 

The other day, master cattle breeder Shinya Ueda from Mikata District visited our store to personally confirm the taste of the beef he raised.

 

Tajimaguro is said to be the ultimate form of Tajima beef from Mikata. Only after Shinya-san, who is deeply dedicated to his craft, personally evaluates and approves the taste does the beef earn the name “Tajimaguro.”

 

Among the Tajimaguro cattle, those with exceptionally fine quality are given the title “Special Tajimaguro.” These are considered outstanding even within the Kobe Beef category, representing a truly exceptional grade of Kobe Beef.

 

The very first cow to receive this prestigious title, “Ueda 687,” was an outstanding specimen at the end of 2024.

 

At Baron, in addition to primarily sourcing the treasured special Kobe beef from Maruse Livestock in Sanda through mainly Mikageya, they also occasionally create opportunities to compare exceptional cattle. Although currently in a pop-up format, these events take place several times a year, featuring limited cuts of beef. This is done to refine their own experience and palate, as well as to understand the passion and dedication of each producer.

 

A customer had a strong desire to try a special Tajimaguro. However, due to their scheduling constraints, the serving date was delayed. Surprisingly, the final result turned out even better than expected. This was because the high quality of the beef allowed it to withstand long-term aging.

 

Good beef is like wine, if it is not handled improperly, the limit point is high for a long time.

Mr. Ueda himself is very concerned about how the cattle he has raised with care are served, and the main parts of Tajimaguro for steaks are not easy to find.

 

Some people come to baron two days in a row, or even twice a week, so we are very grateful for the addition of these wonderful cows, which help us to appreciate each of them. Each one has to be delicious, and that is the ultimate in the forbidden.

No matter how old I get, I will continue to evolve just like Mr. Ueda, who always keeps evolving the most important part of his business, “This is the way it should be.
