This beef was among the top-tier selections from the moment it arrived last year.
We have carefully served it over time, offering it to our regular guests. Even after three months, its best qualities remain unchanged, developing an even deeper and richer flavor.

After being aged for two months, it has now been perfected. When I saw Mr. Kazutaka’s cattle at the year-end Kyōreikai, I knew it had the ideal meat quality and fat content I wanted.
I purchased it for the New Year, and the small, finely textured meat has had any excess moisture dried out. This week, it will finally be cut and prepared for serving.
This Kobe beef, inheriting the tradition of Sanda beef from Kazutaka Seto, a living legend of Sanda, has undergone two months of careful refinement and is now at its peak for consumption.

Perhaps because I had a brief chat with him during the auction, I was fortunate enough to purchase it.
We will begin preparing it this week and next week.
