We used to be closed mainly on Sundays, but from now on it will be changed to [irregular holiday].

Nowadays, thanks to the help of producers, butchers and customers we can focus on beef as much as we like, and are able to offer the best Kobe Beef which is not available anywhere else, in charcoal oven-baked stakes.

Our stocking of Kobe Beef was even enough. I will not post the details in SNS, while it seemed there were not better situations, our stocking of Kobe Beef is now even better, and baron-like.

However, as the owner of a butcher’s shop says, “Even if you get same beefs, its taste depends on who does the preparation and grilling.” I sometimes go to taste Kobe Beef, but now I believe ‘Tastes of ingredients is up to the restaurant. Sometimes I visit a restaurant which is particular about purchasing, grilling and preparing affects the taste of beef significantly, so it is also vital how handle the best beef.

Of course purchasing is important, in last year, I feel that other factors also have a significant impact.

I found that the taste of Kobe Beef was decided by not only purchasing, preparing, handling, and grilling, but also performance of staff.

There are many things that trouble me every year, and I am grateful for this life.

At the end of 2024, several staff joined us. Some of them came from hotel and restaurants, as well as staff with working experience in the service industry such as CAs, have been improving their skills, and several former part-time staff with willingness to contribute are continuing to work for baron after their working experience. 

There are many areas where we have evolved as a restaurant since the virus scare, and thanks to them, I think we are now making a lot of improvements in areas where I found it difficult to make rapid changes along with that growth.

Since the end of last year, the cleaning and preparing has been generally done by myself or by staff who are more skilled depending on reservations and preparations.

Most of the problems I had during business have been resolved and I can see what I have to do.

Thanks to the customers who come to the shop every day, I think I can carry out the work I wanted to do.
